Recipe # 2

This is a recipe that everyone has loved EVERYTIME I've made it.  I have to give full credit to Elizabeth Hart for this one.  Thank you Elizabeth!

Chocolate Chip Cinnamon Banana Coffee Cake (aka TOTAL DELICIOUSNESS!)


Ingredients:
½ c. butter or margarine
¾ c. sugar
2 eggs
1 tsp. vanilla
1 ¼ c. banana – mashed (about 4 medium bananas)
½ c. sour cream
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
½ c. chocolate chips (I use Ghiradelli Milk Chocolate Chips.  If ½ c. is not enough, you can always use more chocolate!

Sugar-Cinnamon mix:
½ c. sugar
1 T. cinnamon

Directions:
Preheat oven to 350°. 
In small mixing bowl, cream butter and ¾ c. sugar together.  Beat in eggs and vanilla.  Stir in mashed banana and sour cream. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture.  Combine the sugar and cinnamon mix in a small bowl and set aside. 

Grease and flour a Bundt pan.  Take 1 tablespoon of cinnamon and sugar mixture and sprinkle at the bottom of the Bundt pan.  Spoon half of batter over the sugar and cinnamon.  Sprinkle another tablespoon of cinnamon and sugar mixture over batter.  Sprinkle ½ c. chocolate chips over cinnamon to form the middle layer.  Top with remaining batter.  Sprinkle another tablespoon of cinnamon and sugar on top of remaining batter.  Bake at 350 degrees for 38-40 minutes or until a toothpick inserted near the center comes out clean.  Cool for 10 minutes before removing from pan to a wire rack.
